The event
At SMEY, we combine NOY—the Neobank of Yeast—fermentation, and biotech to create natural food ingredients, including cocoa butter equivalents (CBE) such as Noyl Cocoa. Rooted in food culture and living processes, our approach uses selected yeasts and controlled biotechnology to develop fats with the functionality, texture, and sensory profile of cocoa butter, while remaining natural and traceable.
