ISM Chocolate Master - The art of sweet temptation

A popular highlight returned! The special show focusing on the art of chocolate made its debut in 2011 and immediately became a big hit among exhibitors and visitors alike.

At this year’s ISM the master chocolatiers from the trade fair’s partner country, Belgium, will gave entertaining live demonstrations of their outstanding craftsmanship and innovative chocolate design and inspire ISM visitors with creative new approaches to making chocolate and pralines.

On the Monday and Tuesday of the fair, the focus was on "food pairing" — serving food and beverages that go together well because their key aromas are compatible. To find these compatibilities, individual ingredients are "broken down" into their individual aromas and compared in a laboratory by means of gas chromatography. The more key aromas the two items have in common, the better they go together. The chocolatiers will show how to use these "aroma trees" to put together delicious combinations of foods and beverages.
